Sloppy Joes


Sloppy Joes                                                 3 meals -5 servings each

3 pounds ground beef

2 large onions, chopped (about 2 cups)

4 medium stalks, celery, sliced (about 2 cups)

2 cloves garlic, finely chopped

1 1/2 cups catsup

3/4 cup water

2 Tablespoons Worcestershire sauce

2 1/2 teaspoons salt ( substitute  lite salt )

1/2 teaspoon pepper

Have ready at serving time for each meal:

         5 hamburger buns, split and toasted

Directions:

Cook and stir ground beef, onions, celery, and garlic in 4 quart Dutch oven until beef is light brown, drain.  Stir in catsup, water, Worcestershire sauce, salt and pepper.   Heat to boiling; reduce heat.

Cover and simmer, stirring occasionally, 15 minutes. ( To serve immediately, remove 1/3 of the beef mixture ( about 1 and 3/4 cups ) and fill buns.  Divide mixture among three 1 pint freezer containers.  Cover, label and freeze no longer than 3 months.

TO SERVE:

About 35 minutes before serving, remove 1 container beef mixture from freezer.  dip into very hot water just to loosen.  Place frozen block in 2-quart saucepan.  Heat uncovered over medium heat, turning occasionally, until hot, about 30 minutes.   Fill buns with beef mixture.

Microwave Reheat instructions:

Dip one container  beef mixture into very hot water just to loosen.   Place frozen block in 2-quart microwave proof casserole.  Cover tightly and microwave on high ( 100 %), stirring every 5 minutes, until hot 14 to 16 minutes.

Easy Caesar Salad

                                                                            8 servings

3 anchovy fillets

1/3 cup bottled Caesar salad dressing

1/3 cup grated Parmesan cheese

1 large bunch Romaine, torn into bite-sized pieces ( about 10 cups)

1 cup onion-garlic flavored croutons.
